food for example lemongrass, ginger, chilli, lime, mint, coriander, basil and cinnamon but it is very light and fragrant. The food is generally colourful and uses plenty of fresh vegetables and herbs. On this one day workshop at Edinburgh Food & Drink Academy we will be showing you how to make various different Vietnamese dishes for you to sample for lunch but also to take home at the end of the day. The day starts at 9.45am with a demonstration and tasting session then everyone moves to the kitchen to make lunch. We will continue cooking in the afternoon and will prepare more dishes for you to take home and enjoy! The recipes covered on the day may include: Demonstration: Pho Gha Stock Practical: Banh Xeo – Pancake with Vegetables Pho Gha - Noodle Soup with Chicken Banh Mi – Pate, Marinated Pork, Herb and Pickle Baguette Summer Rolls with Prawns, Herbs and Noodles with Nuoc Cham Dipping Sauce ______ "Well organised, enough to do, interesting different dips and sauces with more or less the same ingredients. The recipes made on this course contain the following: FISH, GLUTEN, SOYA, EGGS, PEANUTS

This class is not suitable for vegans or vegetarians but can be adapted to be made with non gluten containing ingredients.

Please let us know of any dietary requirements, allergies or special accommodations required at the time of booking. We will be as flexible as possible, when we can, so as to be inclusive to all students but we may not be able to substitute ingredients in the recipes.

We do everything we can to reduce the risk of cross contamination, however we cannot guarantee a completely allergen free environment and therefore our kitchens may be unsuitable for students with severe or life-threatening allergies.

Our one-day workshops and short courses are 16+ unless otherwise specified. Children aged 14 or 15 may attend with an adult over 18.

On the day, the school will be open from 9.30am and the class will begin at 9.45am. The class will be finished by 3.30pm, depending on the course and class size it may finish earlier.
