Staff Experience & Expertise

The teaching team at Edinburgh Food and Drink Academy is composed of knowledgeable chefs holding a range of specialties.

We pride ourselves on being able to offer in-depth, specialist guidance throughout the many modules of our Professional Culinary Courses and on each of our Interest Classes. The wide variety of educational and industry experience held by our teachers is what allows us to do this so well.

Excellence in Every Instructor

We require all teachers leading our full-time students to have received official culinary training. While we do have teachers who studied with us (then missed us so much they came back), our teaching team is carefully selected and made up of highly qualified, well-rounded individuals from a variety of backgrounds.

Our Head Teacher

Our Head Teacher, Caroline Lamont, trained in London before working in hotels, Michelin starred restaurants, and most recently as a high school Home Economics teacher. This incredibly varied background is what makes her so perfect for the role – understanding both the industry and the world of teaching so well makes Caroline an important asset to our team.

Colette Sheridan

Colette Sheridan was taught by our Founder, Fiona Burrell. She’s driven by a love of food, and has worked her way up our kitchen team to become our Senior Teacher. Colette is loved and respected by students and staff alike.

Sue McCracken

Sue McCracken was taught by our Founder, Fiona Burrell. She’s driven by a love of food, and has worked her way up our teaching team and is loved and respected by students and staff alike. If ever the chance, we recommend asking Sue for a story from her private cheffing days – she has many that will wow you!

Sophie Halpin

Sophie Halpin is wonderfully accomplished in both pastry arts and chocolatiering, having led a team of 24 Pastry Chefs at Gleneagles Hotel and released a line of commercial chocolates at Adare Manor.

Heather Byres

Heather Byres has a strong foundation in Southeast Asian cuisine, growing up in Hong Kong and starting her teaching career specialising in these foods has ensured a deep understanding of their ingredients and cooking techniques.

The recipes in our interest classes are developed and written in-house. Meaning everything you make and taste here is the product of our team’s knowledge and creativity. The expertise of our teachers allows us to develop delicious, authentic dishes from a variety of regions and specialities.
