Omakase Chef’s Table with Teddy Lee

Join us for an intimate evening of exceptional Japanese cuisine, as we welcome Chef Teddy Lee, Owner and Founder of Maki & Ramen, Ikigai Ramen and Maki Nori, restaurants located across Scotland, the UK and overseas, to the Edinburgh Food & Drink Academy...

Across the evening, Teddy will take you through 12 Japanese-inspired courses featuring ingredients including sashimi, A5 Wagyu beef, foie gras, caviar and more. Your ticket includes the full 12-course experience, a glass of plum wine, and the chance to hand over the decisions for the evening and let the chef choose what you eat.

Meet Chef Teddy Lee
Teddy Lee came to the UK at 22 after studying confectionery and patisserie, and kitchens had always felt like home. Growing up in a family of restaurant workers and owners, following the same path felt natural. He started young, working as a kitchen porter at 16 and learning the industry from the ground up.

After 17 years in the restaurant world, Teddy took his family to Japan to further develop his craft and learn how to master sushi. He spent months practising his skills, studying ingredients and learning the techniques behind Japanese cuisine before bringing that knowledge back home.

In 2015, he opened Maki & Ramen with the aim of making quality Japanese food more affordable and accessible. After Maki & Ramen placed third in The Sunday Times 100 list of Scotland’s fastest-growing private companies, Teddy was ready for his next challenge: opening Maki Nori in London’s Soho, a high-end hand roll bar focused on the craft of sushi, premium ingredients and attention to detail.

Today, Teddy brings that experience, skill and passion for Japanese cuisine to every dish he creates – and for this dinner, you’ll get to experience it across 12 courses.

What is Omakase?
Omakase means “I’ll leave it up to the chef.” There’s no menu sent ahead of time – or even handed to you on the night. Instead, every course is chosen and prepared by Chef Teddy Lee, allowing you to simply take your seat and enjoy the experience as it unfolds.

We’d love to host more Omakase evenings in the future that can accommodate different dietary requirements, though, so keep an eye out!
