Celebrating British Cookery Schools Week
From October 3rd, cookery schools across the UK are coming together for British Cookery Schools Week, organised by the Independent Cookery Schools Association (ICSA). The week celebrates the variety of cookery education available across the country, from classes for enthusiastic home cooks to professional training for those looking to build a career in food and drink.
As an ICSA member school, we’re delighted to take part. At Edinburgh Food & Drink Academy, we believe cooking is about more than what ends up on the plate. It’s about learning new skills, building confidence, sharing experiences and bringing people together over good food.

Our Classes & Experiences offer something for a wide range of interests and abilities, from baking and patisserie to international cuisines, seasonal cookery and essential kitchen skills. Whether you’re a complete beginner or already comfortable in the kitchen, our classes give you the chance to learn from experienced tutors in our teaching kitchens, with plenty of time to get hands-on.
Alongside our interest classes, we offer Professional Cookery Courses for those looking to develop their skills further or take their first steps towards a career in the food and drink industry. Our professional courses combine practical kitchen experience with expert tuition, helping students build their technical ability, confidence and understanding of the industry.
Making the most of seasonal ingredients
As part of our British Cookery Schools Week celebrations, we’re also sharing a recipe from our teaching team that puts seasonal ingredients and reducing food waste at the heart of the dish.
Our pumpkin cheesecake mousse with pumpkin spiced crumble makes use of around 90% of a whole pumpkin, with the remaining skin transformed into a crunchy, spicy snack. It’s a delicious way to make the most of an ingredient that’s coming into season, while finding creative uses for parts that might otherwise be thrown away. View the full recipe HERE.
